i am a huge fan of a good choc chip cookie.
this weekend i made the best ones yet!

here's the recipe:

1/2 cup unsalted butter, softened
1/3 cup granulated sugar
1/3 cup light brown sugar, firmly packed
2 teaspoons finely grated orange peel
1 large egg
1 1/4 cups all purpose flower
1/2 teaspoon of baking soda
1/4 teaspoon salt
3/4 cup choc chips (i choose milk choc chips)
1/2 cup chopped walnuts

1. preheat oven to 180 C or 375 F, Lightly grease 3 or 4 cookie pans or use baking paper.
2. In large bowl, using electric mixer set on medium speed, cream butter and sugars until light and smooth. Beat in orange peel. Beat in egg until fluffy.
3. In a small bowl, stir together flour, baking soda and salt. Add in thirds to creamed mixture, blending with a rubber spatula after each addition. Stir in choc chips and walnuts.
4. Drop round teaspoonfuls of dough onto cookie trays, spacing 2 inches apart.
5. Bake one tray at a time for 10-12 mins until cookies are slightly browned.




Choc Chip & Vanilla cookies coated with cinnamon - yummy!


225g/8oz - butter, softened
140g/5oz - caster sugar
1 egg yolk beaten
2tsp vanilla extract (recipe actually says orange extract but I swapped for vanilla)
280g/10oz of plain flour
pinch of salt
100g/3 1/2 oz plain choc chips

cinnamon coating:
1 1/2tbsp caster sugar
1 1/2 tbsp ground cinnamon

preheat over to 190C/375F/Gas Mark 5
line 2 baking sheets with paper

put butter & sugar in a bowl, beat together until light and fluffy
then beat in the egg yolk and vanilla extract
sift together flour and salt into the mixture
add choc chips and stir until combined

to make coating mix the sugar and cinnamon in a shallow dish

scoop out tablespoons of the cookie dough and roll in the cinnamon coating.
bake for 12-15 mins. leave on the baking sheets for 5-10 mins then transfer to wire rack
